    F. H. Eilenberger (1878 - 1959), a German immigrant, worked at bakeries in Galveston and Fort Worth before starting this company in 1898. Originally located on the corner of John and Oak streets, the operation was moved to this site in 1918. Eilenberger also lived here for several years. Although he sold the business to his two sons and his son-in-law in 1949, his baked bread continued to be distributed throughout East Texas until 1968. Today the bakery is noted for fruit and pecan cakes, which are produced from a family recipe and marketed worldwide.

In 1881, F. H. Eilenberger's parents left their home in Leipzig, Germany and sailed to America to pursue their dream in the new land of opportunity. In May of 1898, the young 21-year-old F.H. opened a bakery in tiny Palestine, Texas. Along with his hopes and dreams, F.H. also preserved old family recipe for Fruit Cake. Using that recipe, and good old European know-how, Eilenberger's Fruit Cakes became a delicious success. As more and more people bought Eilenberger's Cakes, particularly at Christmas and around the Holiday Season, the Eilenberger Bakery reputation of having the freshest, highest quality products began to grow. Despite a past devastating fire, the Depression years, and two World Wars, the business thrived, and today, Eilenberger's Bakery is the oldest bakery in Texas still operating in the same location.

Just as it was back in F.H.'s day, the bakery today uses nothing but the finest ingredients and insists that every cake be made the old-fashioned way — lovingly mixed, baked and decorated entirely by hand. This is a more time-consuming process, but the human touch, not machinery, is the only way to create a distinctive and delicious product. It is this unique hands-on approach to quality that has made Eilenberger's baked goods and Fruit Cakes a Christmas tradition for over 100 years. While much has changed in the last century, Ellenburger's commitment to quality has never waned.
